It's an amazing recipe.  My husband made it a few years ago for a company dinner. Raves. Emeril learned his creole cajun cooking from the best and it shows.

I'm actually making jumba liya  :-) tomorrow. Not this fancy version, my own. I'll have chicken, ground beef and sausage in it, no shrimp. If I remember, I'll take a picture.

C'est si bon.

If you buy hamburger buns and flatten them to fit in the toaster, butter them after with a little garlic, it goes well with that dish.

If you haven't already, check out Emeril's Red Beans and Rice recipe also on Food Network's website. A lot of ingredients, but worth the effort!

Freaky dink on the red beans.  Had a change of menu at the last minute.  I cooked read beans and rice today instead of jambalaya.

Still not fancy like Emeril, mine had onion, bell pepper, salt, pepper and lightly fried bacon in it. When I don't have bacon, I just use my favorite sausage.  Deer sausage is the bomb in red beans.

Meatloaf is gracing the plate also. I even made a chocolate cake.

Try a place called "Boudreaux and Thibodeaux" in Houma, La., about 60 miles west of New Orleans on Highway 90.

Best restaurant jambalaya and gumbo evah!!

Made it again today. Tried to do it from memorie, but had to look up a couple things..  didnt worry about exact quanities..  this is good stuff!

I also used "smoky paprika'.... 

This one is on my to do meals. onion, peppers and celery...

Mike, my caucajun brother, my husband makes THE BEST gumbo, jambalaya, etouffee, coubion you have ever tasted.

If you're ever up here, stop in.  I promise a food experience you won't forget.   :-)

Mike can back me up on this too I think. The best dish is one you just throw together from memory.  Once you get the main flavor right, the rest is just more of your own added favorites.  Next thing you know, you've got YOUR recipe down and you're ready to try it out on guests.

That is Cajun cooking at it's best.

I would give anything to make some decent pralines.  Or a scratch biscuit.  I hold my head down in shame.

I guess I need to make some pralines. I have 2 lbs of pecans (shelled) They're really easy. The trick is getting it to the right temp and not on a humid day. I ran across a biscuit recipe that I made with butter. The only thing wrong with them is that I didn't add enough salt & I think my oven temp is off a tad.

humidity.  Well, that explains it.  I have never been able to get a praline right.  They are either rock hard or too soft.  The taste is there but nothing else.

If I had a fail safe homemade biscuit recipe I couldn't mess up, my husband might want to remarry me.  LOL !!!

The one time I came close to a decent biscuit was when I tried to make cream puffs.  That's not a biscuit.   :-)

That crawfish is getting expensive. I'd hate to give it up, it's so good.

Just a side note here.  Some people think Cajun means hot or peppered.  It doesn't.  It means made with spices. I don't eat peppered food. When some people try to copy Cajun, they add lots of cayenne. Not me, I like stuff seasoned but not to the point where I gotta sweat to eat it. That ruins a meal. I come from Tabasco land and I cannot stand the stuff.

Plus, what goes in hot must come out hot.  OH NO !!!!!

The stuff in the cardboard can is, but I do like the boxed Dirty Rice, Gumbo.....etc.. I can get them at the .99 Store.

Also try the Vigo Black Beans and Rice. Kinda pricey, but good. Yes, I know it's Cuban.
