Like this:

Crispy, with no big bubbles of fat in it.
I cook it on the waffle iron, thanks Alton Brown.
Turns out perfectly every time.

I like mine with crispy parts and chey parts.

On a side note, I got some of the low sodium bacon from Costco (Kirkland Brand) not really impressed. My wife picked some up from the local butcher that they smoke themselfs, perfect.

Gina,
My wife is a full blooded Costco shopper, and is trying to make me eat healthier!

It was "Kirkland Signature" Item #77000 "50% lower sodium..."

I'll buy it again, it's just that it didnt compare to the thick sliced butcher shop bacon!

I love them. Sam's sucks and the people that shop there are a "lower" class, at least in my area.

The only thing we have in this area is Sam's Club. Pisses me off, as we MUCH prefer Costco. The stuff is simply better there, ranging from the prepared food to the gizmos they sell.

There's only so much crap you can put up with before you say, "ENOUGH!"

The closest town to me of any size is Columbia, MO. My understanding is that the Walton Regime is well-entrenched there. Costco couldn't get in here if it arrived on an asteroid.  :whatever:

Right out of the package or pan al the way to burnt.   Its already cured and and then smoked.  Making your own is so much better.

You got off your ass, now get your wife off her back.
