Mac and Cheese

Crab Mac-n-Cheese

1 stick (1/2 cup) butter
1 yellow (sweet) onion, chopped fine
2 tbsp all purpose flour
3 tsp salt
½ tsp dried oregano
¼ tsp dried chipotle powder (or more to taste)
1 16oz package medium shell pasta
4 cups whipping cream
3 cups milk (skim or 2%)
3 cups Sharp Tillamook Cheddar
1 cup shredded Parmesan
1 ½ cups cooked shredded Dungeness Crab meat

Begin cooking pasta according to package in a large pot
In large non-stick skillet, melt butter over med-high heat; add onion and sauté until tender.
Stir in flour, salt, oregano & chipotle powder. Cook 1-2 minutes
Stir in cream & half of sharp cheddar, stirring until cheese is melted
When pasta is cooked, drain water and return to pot. Add contents from skillet and remaining cheeses and milk. Bring to a slight boil and cook for 10 minutes, stirring constantly
Pour mac-n-cheese into roasting pan/baking pan. Fold in crab. Serve

Optional:
Melt 2 tbsp of butter in a skillet and add 1 cup of panko bread crumbs w/ 1 tsp pepper & ½ tsp Johnny’s Seafood Seasoning. Stir and top mac-n-cheese with mixture. Bake uncovered in 350 degree oven for 15 minutes or until topping browns up.

Serves 16 to 22 hungry campers


I copied this from a fishing site. Havent tried it, but it sure sounds good.

I've never had homemade mac and cheese.

Homemade makes Kraft taste like cardboard.

Cut down the portions, leave out the crab if you want.

Do put the crust on top and bake.

Yummy!

BG, you are missing out.  Homemade is the best!  With crab, even better!   When I get a good deal on crab, I am going to remember that.

BG, you are missing out.  Homemade is the best!  With crab, even better!   When I get a good deal on crab, I am going to remember that.

Homemade mac and cheese with sharp cheddar in it, is a good side dish, but for an entree' we add lots of ham chunks.
