evening snacks

As most of you know or may not know is that i work retail, mainly mid shifts (10-7 or 11-8), anyway when I get home I am hungry, but never know what to have. Today was a scorcher, so i didn't want to fire up the grill. I searched high and low. Well I remembered that I had bought a loaf of  garlic ciabbatta(sp?) bread and i had some left over squash and zucchini from my little lone cookout Tuesday. So I fried up the squash and zuchinni, with some olive oil and  rubbed sage. Then  put in the bread to warm up the garlic. Took out the bread, and sprinkled some shredded three cheeses and placed the zuchinni and squash out top. It was really good and filling. Sometimes one never knows what snacks they can make by simple left overs!!! any other suggestions??
