Five-Chip Cookies (minus the fifth chip)

As some of you may or may not know, one of my 2008 resolutions was to try a new cookie recipe a month from the cookie cookbook (Best of Country Cookies) I received as a Christmas present.

I present to you January's installment: Five-Chip Cookies

I couldn't find vanilla chips and I wasn't in the mood to scour the city for them so that is the only ingredient I omitted.

I think they still taste awesome. I plan to drop off a plate of these to my family members soon.

Five-Chip Cookies

1 c. butter or margarine, softened
1 c. peanut butter
1 c. sugar
2/3 c. packed brown sugar
2 eggs
1 t. vanilla extract
2 c. all-purpose flour
1 c. old-fashioned oats
2 t. baking soda
1/2 t. salt
2/3 cup each of milk chocolate chips, semisweet chocolate chips, peanut butter chips, vanilla chips and butterscotch chips

In a mixing bowl, cream butter, peanut butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, oats, baking soda and salt; gradually add to the creamed mixture. Stir in chips. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350 degrees for 10-12 minutes or until lightly browned. Cool for 1 minute before removing to wire racks. Yield: 4-1/2 dozen.
