Pasta Salads

Okay, I always make the Suddenly Pasta Salad from the box, but I assume some peeps on here gotta have some good recipes.  :)

So, share your favorite pasta salad recipe.

I like egg noodles tossed with olive oil, red wine vinegar, capers, onion, bell pepper, sliced black olives, cracked black pepper, a dash of red pepper flakes, and salt.

I like egg noodles tossed with olive oil, red wine vinegar, capers, onion, bell pepper, sliced black olives, cracked black pepper, a dash of red pepper flakes, and salt.


That sounds good Undies.

I love this one.... the marinated artichokes give it a distinct taste.

1 pkg (8oz) shell macaroni or tinin
1T vegetable oil
1 jar (6oz) marinated artichoke hearts
1/2 C Italian salad dressing
1 clove garlic (minced)
2 T cider vinegar
1 C mayo
salt to taste, blk pepper to taste
1/2 C chopped, cooked broccoli
1/2 C frozen peas (thawed)
10 cherry tomatoes (halved)
1/2 C pitted halved black olives

Cook pasta, adding oil to cooking water. Drain well. Put pasta in lg bowl. Drain marinade from artichokes and pour over pasta. Add Italian dressing and garlic to pasta. Cut artichoke hearts into quarters, add to pasta. Gently mix.

In a small bowl, combine vinegar and mayo. Season with salt and pepper. Pour over pasta mixture. Gently stir in broccoli, peas, tomatoes, and olives. Refrigerate overnight. <---- important step!

Mix gently before serving.

Missing the most important ingredients Chopped pickles and perhaps chopped pickled beets !

I forgot the parmesan cheese.  The dry kind. :)

I do the Ranch style from the box, but add diced tomato and diced cucumber, and if I feel like it, sliced olives to it.
