Coquito---Coconut Eggnog  (Puerto Rican Eggnog)

1 pint heavy cream
1 can cream of coconut
1 can coconut milk
1 can sweetened condensed milk
1/2 cup white rum
1 teaspoon vanilla or rum extract
1/2 teaspoon each of  cinnamon, cloves and nutmeg

Blend all together then chill untill cold.

This is some of the best eggnog I have ever tasted.....
A liberal who is mugged by reality becomes conservative.

I found the original recipe given to me by a man I worked with that was from Puerto Rico

COQUITO

1 can cream of coconut
1 can of condensed milk
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
3/4 cups white rum

Put all in a blender and mix.


This is the recipe I fell in love with, but lost for a while.

Good stuff...I've had it in Puerto Rico and by Puerto Ricans here.....a nice interesting tropical spin on traditional egg nog.
